If you have been in this business for any significant amount of time you know that one of the first things you have learned is that everyone wants a piece of your money. The Government, customers,  entertainment, employees, advertisers, vendors, your own family. If you were to fall behind on just 7 of the 37 variables your  business is losing .03 cents every time your staff pours a drink.  And that is assuming you even have any idea what the37 variables are.  This is the exact source of your losses.
